Coconut Banana Bread

My kids and I love banana bread, and for some reason we always have a few bananas that we forget to eat! What better way to use them than in banana bread right?! I wanted to try something with a bit of a different flavor and just happened to have a can of coconut milk (not coconut cream). So here it is! It came out so amazing! Super moist and flavorful. Let me know what you think!
Here's the recipe

  • 3or 4 very ripe bananas
  • 1 1/4 cups of sugar
  • 1/2 cup. butter
  • 2 eggs
  • 1/2 cup of coconut milk
  • 1 tsp vanilla extract
  • 2 1/2 cups of all purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup shredded coconut (sugar free) - optional
  1. Preheat oven to 350 degrees F.
  2. With a whisk, whisk together sugar, eggs, vanilla, coconut milk and melted butter
  3. Mash bananas with a potato masher, add to the sugar, eggs mixture. Mix until combined
  4. Sift in flour, baking powder and salt.
  5. Add coconut flakes if you are using them
  6. Combined everything with a wooden spoon
  7. Pour mixture into a bread loaf dish and bake for 1 hour 15 minutes. Or until golden brown. Check it constantly to avoid burning.
