Crepes!

Let me just begin by saying I love crepes! They are one of the most versatile and easy things you can make! You can have them for breakfast, snacks, desserts...savory or sweet they taste good with almost anything. Here's the recipe for crepes and different filler ideas! This makes about 10 crepes!


Crepes:
  • 4 eggs
  • 1 cup milk
  • 1/2 all purpose flour
  • 1 tbsp sugar
  • pinch of salt
  • unsalted butter
  • powdered sugar (optional)
Fillers: ( Just some of our favorites)
  • Banana slices and peanut butter
  • Banana slices and whipped cream
  • Banana slices and chocolate syrup
  • Banana slices and whipped cream with almond slices
  • Banana slices and jelly
  • Strawberries and whipped cream
  • Strawberries and chocolate syrup
  • Mangoes and whipped cream
  • Peanut butter and jelly
  • Cream cheese and jelly
  • Guava paste and cream cheese
  • Bacon and scrambled eggs
  • Sausage link with maple syrup
Here's what to do:
  1. Add the eggs, milk, flour, sugar and salt to a blender. Blend for about 10 seconds until everything is mixed thoroughly.
  2. Heat a med. skillet and add 1/2 tsp of butter and let melt.
  3. Add 1/3 cup of batter and swirl to cover the skillet.
  4. Cook on med. low heat for about 1 minute on each side. (use large spatula to flip)
  5. Fill with your choice of ingredients, wrap and let cool before you top with powdered sugar.
