Arroz con Pollo Colombiano ( Colombian Style Rice and Chicken)

Arroz con pollo is one of those dishes that exist in almost every region of the world. There are endless variations of it and everyone has their own way of making it. Today I'll give you the Colombian version, the one I grew up eating!

  • 4 or 5 chicken thighs (or breast)
  • 3 cups of water
  • 1 large onion, finely chopped
  • 1 large tomato, finely chopped
  • handful of cilantro
  • 1clove of garlic, finely chopped
  • 1/2 cup of frozen mixed vegetables
  • 1 cup of uncooked rice
  • 1 package of sazon Goya
  • salt to taste
  • pinch of cumin
  • 2 tsp vegetable oil

Here's what to do:

  1. Season the chicken with salt and place in a large pot with water and cover. Cook over med. heat for about 20 minutes.
  2. Remove chicken and shred with fork, set aside. Save the water.
  3. Saute onions, cilantro, tomatoes and garlic in vegetable oil for a a few minutes, until the onions are translucent.
  4. Add two cups of water (same water you used to cook the chicken in) to the sauteed veggies.
  5. Add rice, shredded chicken and frozen veggies.
  6. Season with salt to taste, sazon and cumin.
  7. Stir gently and cook on med low heat for about 30 minutes. Do not stir until it's done.
Remember every oven is different and the times I give you should just be a guide. They might be a bit different for you.
