Mexican Salsa

I love making this salsa for tortilla chips, to top grilled chicken, meat or any Mexican dish I make.
Salsa is traditionally made with some kind of Chile like Serrano, but I'm not a fan of spicy food so I don't use chiles. Here's how I make it.

Arroz con Gandules (Puerto Rican Rice with Pigeon Peas)

Last weekend was Father's day and I wanted to surprise my hubby by making him arroz con gandules. His family is Puerto Rican and he loves this dish!! It is super tasty and pretty easy to make!  I've heard of several different ways of making it, here's how I make mine!

Huevos Pericos (Colombian Scrambled Eggs)

In Honor of Father's day Today I will be sharing something my dad always made for us! Colombian scrambled eggs. Weekend breakfasts are his specialty! When we were growing there wasn't a weekend that he wouldn't get up early and make us these huge breakfasts!! Until this day whenever I go home or he visits my house, he always makes us breakfast and brings back such great memories!
We serve these scrambled eggs with arepas and hot chocolate!

Lentejas Colombianas (Colombian Lentil Soup)

For me Lentil soup is the quintessential comfort food! My mom always made it when I was growing up, at least once a week. This soup is not only delicious but also super healthy for you, Lentils are full of vitamins and minerals they are a great source of iron and fiber! They also help you lower your cholesterol and lower your risk of developing heart disease. We eat this at as a thick, creamy soup usually served with rice and some kind of meat. Here's my recipe...well really, this is my mom's recipe haha. Gracias mami!

Chimichurri Sauce

This sauce is by far my favorite! It is usually used for steak, but I use it on just about everything that could use a little help! I first had this chimichurri sauce in a Colombian restaurant in Florida a few years ago and have been trying to remake it ever since! I finally got the recipe just right, tastes just like it does in the restaurant. Here's the recipe:
