Lomo Saltado

Lomo saltado is a delicious Peruvian dish. It's almost like a Peruvian beef stir fry. The first time I had this dish was in a wonderful restaurant called Cuscos in Hiroshima, Japan. My family loves it when I make this!!

Here's what you need:

  • 1 lb. of beef 
  • 1/4 cup of vegetable oil
  • 1 white onion chopped in long strips
  • 2 large tomatoes chopped in small pieces
  • handful of cilantro
  • 1 tablespoon of white vinegar
  • 1 tablespoon of lime juice
  • 3 tablespoons of soy sauce
  • french fries, fresh or frozen
  • Salt, garlic powder and pepper to taste
  • wok or large skillet
  • Rice

Here's what to do:

  1. Cut up your beef in thin strips
  2. Heat up your oil and cook beef
  3. Remove cooked beef and set aside
  4. In same skillet saute onions, tomatoes, and cilantro for a couple of minutes
  5. Add salt, garlic powder, pepper, vinegar and soy sauce, fry for another couple of minutes
  6. Add beef into the skillet, stir fry again for another few minutes
  7. Add cooked french fries and lime juice into the skillet for a couple of minutes, stir
  8. Remove from heat and serve warm over a bed of white rice
  9. Garnish with cilantro
