Super easy mini apple pies
This is the best time to start baking and experimenting with fall flavors! This recipe is really simple and takes no time at all! I love the individual portions, makes for a perfect snack!!
Here is the recipe:
1 c. flour
2 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
3/4 c. water
2/3 c. butter
(1extra egg and milk for egg wash)
1 can (1 lb. 5 oz.) apple pie filling
1 tbsp. lemon juice
1/2 tsp. cinnamon
Preheat oven to 375 degrees. Blend crust ingredients. Beat at medium speed for 2 minutes. Refrigerate for an hour. Roll out (with plenty of flour) and use a biscuit cutter to cut out 24 circles.
Line cupcake pan with dough and spread up the sides. pour in about 1 tsp. of filling into each one. Cover with dough and push down the sides so top and bottom stick together.
With a fork poke each one on top. beat egg with milk and brush on the tops. generously sprinkle with brown sugar.
Bake in preheated oven for about 25 minutes.
Let cool and then use a butter knife to pull them out.
