Arroz con leche Colombiano (Colombian Rice Pudding)

Rice pudding is a very popular dessert in almost all Hispanic countries and everyone has a different way of making it. This recipe is the way my mom has always made it and it's one of my favorite desserts! Every time I make this it reminds me of home :)
Here's what you'll need:
1 cup of long grain white rice
3-4 cinnamon sticks(more for garnish)
4-6 cups of milk
13.5 oz. can of coconut milk
1 can of sweetened condensed milk
1 can of evaporated milk
1/2 tsp vanilla extract
ground cinnamon (for garnish)
raisins (optional)

  • In a large saucepan place rice, milk (enough to cover rice), coconut milk, and cinnamon sticks, over low medium heat and bring to boil. Stir every five minutes to prevent the rice from sticking to the bottom.

  • Add vanilla extract, evaporated milk, condensed milk and raisins, bring down to low and continue cooking for about one hour, keep adding milk to saucepan to get the desired consistency  (remember that the rice thickens as it cooks, so be careful not to over cook)

  • Stir and remove from heat, cover to prevent it from getting any thicker. It should be very creamy, serve and sprinkle with ground cinnamon. We eat it warm, but it tastes great cold as well. makes A LOT of servings! lol.
